German Pancake/Bread

2 eggs, beaten
2-4 T almond flour (2 T is more eggy, 4 T is more bread-like. Can also use a mix of almond and coconut flour)
1/4 t baking powder
dash salt
pat of butter (optional)
1 T almond milk (optional)

Mix ingredients. Pour into microwave-safe container (minimum two cup capacity). Cover with plastic wrap and make small slit on top of the wrap.  Microwave for 2-3 minutes, until egg is no longer runny. I put butter and salt on mine. You could add veggies, cheese, meat, or you could add vanilla and a little honey. I've been playing with it.
